No fuss tomato garlic pasta with homemade sauce made using butter, crushed garlic, tomatoes, cream cheese and starchy pasta water - so easy and yummy!
When I created and posted this recipe for cherry tomato and garlic pasta, I thought I had nailed the perfect tomato garlic pasta recipe with homemade tomato sauce. I was wrong. This thing, right here, is easier than that making it the perfect recipe for a quick and easy no fuss tomato garlic pasta sauce.
This delicious tomato garlic pasta is ready in 20 minutes and you need only FIVE basic pantry ingredients to make the best homemade pasta sauce. In this blog post, I am going to share with you, my two secret tips to make the best creamy tomato garlic pasta at home. The pasta sauce is made without wine, so kids can have this too, making this perfect for a weeknight vegetarian meal.
Tips to make the best tomato garlic pasta sauce:
- pasta water is gold. The key ingredient to make a really good pasta sauce is to use the pasta water which has starch in it. The starchy pasta water that you get when you boil your pasta, is what we are going to add to the yummy tomato garlic sauce (made with butter) and you see the magic, how it naturally thickens the sauce.
- secret ingredient two is to add couple of tablespoons of cream cheese to balance the tanginess of the tomato. I love adding cream cheese as it thickens the sauce and gives the texture even more perfection.
How to make quick and easy tomato garlic pasta?
- start by heating some butter and adding garlic to it.
- add pureed tomatoes and tomato paste and cook for about 4-5 minutes on medium heat
- now add parsley, olives (if you like), or use grilled vegetables. add 1/2 cup pasta water, salt, pepper and boiled pasta of your choice (I used fusilli, you can use anything you like: spaghetti/ penne/ macaroni or farfalle) cook for about one minute, finally add the cream cheese and mix everything until well combined
Mix everything well and serve with homemade garlic breadsticks or a yummy arugula salad.

No fuss tomato garlic pasta with homemade sauce made using butter, crushed garlic, tomatoes, cream cheese and starchy pasta water - so easy and yummy!
Ingredients
- 2 cups or 130 grams pasta
- 2 medium or 150 grams tomatoes
- 2 tbsp butter (salted)
- 1 1/2 tbsp tomato paste
- 1 tbsp garlic (chopped)
- salt
- pepper
- 1 1/2 tsp parsley (dried or fresh)
- 1/4 cup cream cheese
- olives
Instructions
- Boil pasta as per package instructions. Drain the pasta reserving 1/2 cup of starchy pasta water (that you are left with once the pasta has cooked al dente)
- While the pasta is cooking, prepare your tomato garlic sauce. Cut the tomatoes one by four and add them to a blender and mix until they are fully pureed. Keep aside.
- In a pan, add butter and let this melt. Add garlic and cook for a few seconds. Add the pureed tomatoes and tomato paste. Cook for 6-8 minutes on medium heat until the excess water has dried out.
- Add olives, pasta water, boiled pasta, salt, pepper and parsley. Mix well and finally add the cream cheese. Cook for one-two minutes and transfer to serving bowls. Enjoy.
