Okay FINE! Yes I am sort of obsessed with beetroot now.... The regular (re) appearance of this out-of-the-world beetroot hummus and these oh so yummy beetroot kebabs on my Instagram stories is a proof of that too. Its time to say hello to my new favourite veggie (AND HEALTHY!!!! with ALLLLL CAPS) aka beetroot quinoa burgers.
I am loving all things quinoa these days and I am loving all things beetroot. After developing this simple recipe for roasted sweet potato and quinoa salad on the blog last month, I am suddenly loving all things sweet potato too. Question: do you guys want an easy recipe for sweet potato fries? I keep thinking if you are up for these super simple recipes too??? Anyway, focus -> these beetroot quinoa burgers are a) vegetarian (and vegan!), b) so healthy, c) easy!!! and d)LIFE CHANGING! okay not life changing, but yes, life changing!!! and they 100 percent qualify for a recipe for valentines week 😀 they are so pink and pretty.
Imagine soft (lightly grilled) burger buns + healthy and delicious beetroot quinoa patties + smashed avocado and a lot of arugula. yum or YUM? Its almost like salad in the form of a burger, no kidding!!
How to make healthy beetroot quinoa burgers?
- prepare the beetroot quinoa patties by mixing roasted beetroot and quinoa in a blender/ food processor together with some onion powder, garlic powder and salt. prepare beetroot quinoa patties
- pan fry these beetroot quinoa patties until golden brown
- time for burger buns: you totally want to grill them for a lightly charred texture 😀
- assemble: add smashed avocado or homemade guacamole & serve with fries or how about these oven baked parmesan potato wedges or this delicious arugula chickpea salad ????

Beetroot and Quinoa Burgers
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 4 Burgers 1x

Healthy and delicious roasted beetroot and quinoa burgers made with the simplest ingredients assembled with arugula and avocado.
Ingredients
- 170 grams beetroot (thick cubes) (measured post washing, peeling and cutting)
- 4 tbsp + 1 tsp olive oil
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- salt
- 1 cup quinoa (cooked)
- 4 burger buns
- 2 cup arugula
- 1 avocado
- 1/2 tbsp lemon juice
Instructions
- Pre heat the oven to 200 degree celsius. Cut the beetroot into thick cubes and transfer to a mixing bowl. Add one tables spoon olive oil and salt. Mix well. Transfer to a baking sheet and bake for 20 minutes. Let this cool.
- To a blender or a food processor, add cooked quinoa, roasted beetroot, garlic powder, onion powder, one tsp olive oil and mix until well incorporated and a dough is formed.
- Divide the mixture into four parts to make beetroot quinoa patties.
- Heat 1 1/2 tbsp oil in a frying pan and pan fry the beetroot quinoa patties roughly 3 mins per side on medium low heat until the quinoa crust is golden brown in colour. Repeat for the remaining patties and keep aside.
- Grill the burger buns or lightly toast them. Keep aside.
- In a small bowl, smash the avocado, add lemon juice and salt and mix well.
- Assemble the burger with arugula leaves, beetroot quinoa patties and smashed avocado. Serve with fries.
