Delicious and easy sweet corn and cheese fritters that are perfect for a quick and yummy savory breakfast. Almost like savory pancakes.
There are two kinds of people in the world. The one who would enjoy granola for breakfast, or all other sweet things, but me, I am forever team savory when it comes to breakfast. Be it idlis with some homemade tomato peanut chutney, or yummy corn toasts, I love starting my day with something not-so-sweet with a delicious serving of dalgona coffee.
I am yet to discover a recipe for the perfect breakfast pancakes, but did discover one as its savory version in the form of fritters - not just regular boring fritters, but delicious cheesy corn fritters loaded with lots of spring onions (aka scallions) and served with sour cream and more spring onions.
These yummy corn pancakes have the perfect texture - they are crispy from the outside and so soft and cheesy from the inside. Plus the sweet corn that is added is so juicy. I also use some baking powder which makes these pancakes spongy and fluffy. The best part about this recipe: you only need some basic pantry staples probably already lying in your kitchen. Its so easy and delicious.
Lets learn how to make to make cheesy corn fritters.
What you need?
- corn
- spring onions
- egg
- milk
- flour
- baking powder
- mozarella cheese
Add all of your ingredients to a bowl and mix well.
..... until everything is well combined and a sticky wet mixture is formed.
Heat some oil in a pan. Place the corn fritters on the pan using an ice-cream scooper. Spread them out with the back of a fork. Now shallow fry them for a couple of minutes each side on medium heat.
Once they are cooked from both sides, they should be brown in color.
Transfer them to a serving plate or create a huge stack of corn fritters. Add some sour cream or homemade caramelised onion dip or the yogurt version of the onion dip on top & sprinkle some chopped spring onions. Enjoy them as a snack or as yummy vegetarian savory pancakes.
possible variations/ questions
- What kind of corn to use for corn fritters recipe? I used frozen corn for this recipe. You can use fresh corn off the cob as well. (Do not use creamed corn)
- What to serve with corn fritters? I love serving them with some sour cream. This delicious onion dip should work too. Or serve them with salsa or mayonnaise. Top with crumbled cotija cheese for even more flavor.
- Can corn fritters be frozen? Yes. For upto 1 month.
- Can corn fritters be made ahead? Yes, just make sure you cook them a minute less than whats indicated in the recipe card. When you are ready to serve, cook them again on high heat. Or bake them at 200 degree celsius for 15 minutes to complete the cooking process.
- How to re-heat corn fritters? My favorite way to re-heat corn fritters is by baking them. I lay them on a baking grill sheet and let them cook in the oven for about 10-12 minutes at 180 degree celsius.
- What are possible additions to corn fritters? You can add some grated zucchini or carrots to the mixture. Or even a tsp of Mexican spice for extra flavor.

Ingredients
- 1 1/2 cup Sweet Corn (boiled)
- 1/2 cup Mozarella Cheese (grated)
- 1/3 cup Spring Onion (finely chopped)
- 1 Egg
- 1/2 tsp Baking Powder (see note 1)
- 1/8 cup Milk
- 3/4 cup Flour
- salt
- 3 tbsp Oil (for frying)
- 1 1/2 tbsp Sour Cream (optional)
Instructions
- In a large mixing bowl mix together corn, cheese, spring onion, flour, egg, milk, baking powder and salt.
- Heat about 1 tbsp oil in a pan and place the fritter mixture with the help of an ice cream scooper. Fry two fritters at a time.
- Let these fry for about 2 minutes on medium low heat and then flip and fry for 2 more minutes on the other side.
- Once they are cooked, transfer them to a serving plate and serve with sour cream or caramelised onion dip or its healthier yogurt version and sprinkle some spring onions.
Notes
Note 1 - I have tried this recipe both: with and without baking powder. It works fine either way, the baking powder gives it extra sponginess and makes them slightly fluffy. You can totally skip if you want.

Hi Yukti. We used it for binding: so that everything comes together. You can just add more milk in order to create a sticky mixture like ours and then go ahead and cook the fritters.
