New year 2020 started with a lot of goals and one of them was reducing the intake of gluten, which naturally resulted in increment of rice intake. Not a good practice, I know... Still struggling to find a good balance and even though this encouraged me to consume more salads or completely got me hooked to pumpkin, carrot and coconut soup, I could not help but experiment a lot with rice recipes.

Anyway, I always tend to incline towards desi flavours when it comes to rice recipes and this simple quick and easy tadka rice recipe is something I make when I really can not think of anything for dinner.
Made with very simple spices: turmeric, salt, mustard seeds and some super basic veggies like onions and tomatoes, this recipe for tadka rice is something I enjoy with yogurt.
Things you need to make tadka rice?
Onions, tomatoes, rice, turmeric, mustard seeds (white & black), curry leaves, chilli (optional) and some heeng (asafoetida), dried chillies
How to make tadka rice?
- heat oil in a pan and add onions. Let cook for a couple of minutes.
- push them aside on one side of the pan and add the tempering (curry leaves, red chillies, mustard seeds and chillies), let this cook for a minute or two
- add tomatoes, salt and turmeric
- let cook and add rice, mix, cook for a couple of minutes, and serve

Quick and easy tadka rice recipe. Boiled rice tossed in onions, tomatoes and simple tempering of mustard seeds (rai and sarson), kadhi patta (curry leaves) and turmeric.
Ingredients
- 1 cup onions (sliced)
- 2/3 cup tomatoes (chopped)
- 2 tbsp oil
- 1/2 tsp rai ((red mustard seeds))
- 1/2 tsp sarson ((black mustard seeds))
- 1/4 tsp heeng ((asafoetida))
- 2-3 pieces dried red chillies
- 2 cups cooked (boiled) plain white rice
- 3-4 kadhi patta (curry leaves)
- 1/2 tsp turmeric powder
- salt
Instructions
- In a pan, add oil and onions. Cook on medium low heat for 2-3 minutes.
- Push them aside, add mustard seeds, red chillies, curry leaves, asafoetida and cook for about a minute until the mustard seeds crackle.
- After 2 minutes, add tomatoes, turmeric and salt. Cook for about 2 minutes and add rice.
- Mix well and cook for 1-2 minutes. Sprinkle some chopped yogurt and serve hot.
