Here is the thing about garlic and butter - you add any veggie to this 'sauce' and transform the dish from ok to awesome in one single step! The aroma that you get from sautéing garlic and butter together is heavenly, isn't it? This quick and easy mushroom rice is one of the simplest recipes I have made, plus it truly is minimal and requires very few ingredients
What I also like to add in all my rice recipes, including this easy garlic butter mushroom rice, is a generous amount of spring onions (or scallions) - right in the end. Just for an asian/ chinese touch to the recipe. It adds so much flavour + a cube of vegetable stock, while its cooking, that acts as a game changer in this simple vegetarian rice recipe.
How to make one pot garlic butter mushroom rice?
- saute some garlic and butter
- add the sliced mushrooms and cook until they are brown
- add rice (I used long grain basmati rice) + water + stock cube (skip if you are using liquid stock)
- let cook
- add spring onions
- EAT!

Tips to make the best mushroom rice?
- How to cook mushrooms? - ALWAYS always spread the sliced mushrooms evenly on the pan, this will ensure them to cook until golden brown and prevent them from steaming instead. Watch the video for mushroom rice in this blog post.
- Vegetable Stock - In addition to garlic, there is only one more thing you add to this rice for the flavor so dont skip the stock. If you live in India and cant find vegetable stock, use these cubes and mix with water as explained in the recipe card.

Description
Easy one pot garlic butter mushroom rice ready in less than 20 mins - loaded with button mushrooms tossed in best ever garlic butter sauce.
Ingredients
- 300 grams Mushrooms (sliced)
- 2 tbsp Garlic (chopped)
- 3 tbsp Butter (or oil - if trying vegan)
- 1 tbsp Stock Powder or 1 cube (See Note 1)
- 1 cup Rice
- 2 cups Water
- 2/3 cup Spring Onions
- Salt
- Pepper
Instructions
In a pan, add butter and garlic and sauté for a a few seconds on medium heat until garlic turn light brown and fragrant.
- Add the sliced mushrooms and cook on medium flame for 4 to 5 minutes just until they start turning brown in colour.
- Add rice and water, stock cube, salt and pepper and mix well.
- Cover and let cook for 10-12 minutes on medium heat. Turn off the flame and let it stay covered for additional 2-3 minutes.
- Take off the lid and add chopped spring onions. Mix well and serve hot.
Notes
Note 1: If you have access to vegetable stock, then skip the stock cube and add stock instead of water.
