Its very rare that I would pick something sweet for breakfast when I have the option to pick a delicious savoury toast (these veggie toasts are my fav!) with a tall glass of Dalgona Coffee. Of course this does not count when I feel like eating french toast, or build up a granola yogurt parfait with some homemade crunchy chocolate granola and lots of fresh strawberries- which I am sharing with you today. Is it a dessert... is it a snack? That's for you to decide!
This recipe for homemade chocolate and walnut granola gives you the flexibility to adjust sweetness, chocolate flavour and saltiness (yes, a little flaky salt makes it even better) and keeps you sorted for days (actually weeks) for sweet breakfasts or some healthy snacking? Totally acceptable... Homemade granola is great when craving for a sweet vegetarian (and naturally gluten free) and egg less breakfast- this recipe for crunchy granola can easily be converted to vegan by simply replacing chocolate chips with vegan ones.
There is no doubt that homemade granola is way better than store bought. You get to pick the right amount of "healthy" you want it to be and no one is watching you when you add those chocolate chips. The best part about this recipe is that it comes together so quickly! You simply mix everything and spread it over a sheet pan and let the magic happen in the oven. You throw in some chocolate chips to create beautiful bite sized crunchy clusters that add magic bites of crispiness to your delicious breakfast. Then add some yogurt, some fresh fruits and build up those pretty parfaits for brunch.
How to make chocolate and walnut granola at home?
Ingredients for homemade chocolate granola
- Oats: simple old fashioned rolled oats like these
- Coconut Oil or Unsalted Butter: melted - I love the flavour of coconut but feel free to add butter instead
- Cocoa Powder: regular unsweetened cocoa powder
- Sugar: white or brown
- Walnuts: roughly chopped - one by two. Feel free to add more nuts (cashews, almonds)
- Vanilla: essence or extract
- Chocolate Chips: mix of white, dark and milk
- Salt: flaky sea salt works best! Highly recommend using it.
Instructions
Mixing - to a large bowl, add oats, coconut oil (or unsalted butter), cocoa powder, sugar, vanilla and mix well.
Bake - transfer to a large sheet pan/ baking tray lined with parchment paper and cook/ bake for 20 minutes. Add walnuts, toss and bake further for 5-10 minutes until golden brown and crunchy. Now let sit on kitchen counter for 5 minutes and add chocolate chips. Mix well to form thick clusters to your liking. Add flaky sea salt and mix again.
Cooling/ Storing homemade Granola - Let the granola sit on the counter for at least 30 minutes and let cool naturally. If you are living in India (like me) - let cool for 10 mins till it comes to room temperature, then transfer in the refrigerator for 20 mins before eating/ storing.
The best way to eat homemade granola? Snack! Just kidding, or may be not... OR add yogurt to a bowl, add crunchy homemade granola, top with some fresh fruit, more nuts? some seeds would be nice too. Enjoy.

- 1/2 cup coconut oil or unsalted butter
- 1/4 tbsp cocoa powder (unsweetened)
- 3-4 tbsp sugar (see notes)
- 2/3 cup cup walnuts (lightly broken/ chopped)
- 2 tsp vanilla extract (essence)
- 1/2 cup chocolate chips (mix of dark, milk and white chocolate chips)
- Flaky sea salt (or regular salt) - just a pinch (as per your liking) roughy 1/4-1/2 tsp

Notes
- What kind of sugar to use for Granola? I have used regular white caster sugar for the recipe. Brown sugar should work too.
- How much sugar to use? I like to use 3 tbsp for this recipe. However I felt I needed to add some syrup to my parfait. The recipe is very flexible and lets you choose the amount of sweetness you would prefer and how healthy you would like the granola batch to be.
