Healthy, gluten free, egg less oatmeal banana and chocolate chip cookies made without flour or refined sugar - yet so chewy and yummy.
These chewy oatmeal banana cookies are so healthy and flavoured with all good things including cinnamon and coconut oil, naturally sweetened with honey and of course a lot of chocolate chips for that real chocolate flavour. You can nuts: crushed walnuts, cashews or almonds or even seeds like pumpkin seeds, melon seeds etc. You do you.
Making these flourless breakfast oatmeal cookies, felt like repeating my recipe for crunchy homemade granola and seriously I enjoyed this crunchy (yet chewy from inside) cookie on some yogurt with some fruits like a parfait. You can try this with ice cream too. So yummy.
How to make eggless oatmeal banana cookies?
Things you need:
- Oats - regular old fashioned thick cut oats - no need to powder them to make oat flour, just add as it is.
- Honey - for natural sweetness, since we making these cookies without any refined sugar, we still want them to be sweet
- Bananas - also for sweetness and texture, since we are making these cookies without eggs
- Coconut oil - for great flavour and using as a substitute to butter
- Cinnamon - powdered cinnamon for great flavour
- Chocolate chips - just because....
Instructions? Just add everything to a large mixing bowl.
This cookie "dough" - (falls apart easily) makes 9-10 cookies. The best way to shape them is to rub some water on your palm or take the cookie dough roughly equal to 1 big lemon and place them on the cookie sheet. Press gently and shape with your hands to make them round.
Bake them for 30 minutes at 180 degree celsius & enjoy.

Ingredients
- 1/2 cup mashed banana
- 1 3/4 cup old fashioned thick oats
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/2 cup chocolate chips (mixed: dark, milk & white)
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 180 degree celsius.
- In a large mixing bowl, add all ingredients and mix well.
- Line a baking sheet with parchment paper.
- Rub some water on your palms and take cookie dough (roughly as much as 1 big lemon) and place it on the baking sheet.
- Repeat for the remaining dough until you have 9-10 cookie balls on the sheet.
- Press them down and shape the edges.
- Bake for 30 minutes at 180 degree celsius.
- Transfer to kitchen counter and let cool for 10 minutes until they get a little more crunchy from the outside. Enjoy.
