A delicious warm bowl of roasted tomato and basil soup is all we want right now as we write this blog post. Created, developed, tested and re-tested so many recipes for you guys while we took a small break from the blog and did a lot of "behind-the-scenes" and backend tasks including creating a privacy policy page as we continue doing sponsored posts on the blog.
This little blog, growing in views and visits day by day has motivated us so much to try and test so many recipes that we can not wait to share with you guys! While the main focus of this recipe blog will continue to be starters, appetisers and hearty comfort meals - we also have more dessert recipes scheduled for the coming weeks.
With Delhi weather getting colder day by day, we thought this roasted tomato and basil soup would be the perfect recipe to start our comeback with! This delicious roasted tomato and basil soup is ready with just a few simple ingredients and is super easy to make!
Start by roasting the tomatoes, onion and garlic in the oven at 200 degree celsius for 20 minutes and then further 10 minutes at 230 degree celsius.
In a heavy bottom pan add water, vegetable stock cubes, roasted tomato mixture and basil leaves. Bring this to a boil.
Blend the mixture very well.
Serve hot with crusty bread π

Warm, hearty and comforting roasted tomato and basil soup with a hint of garlic.
- 2 cups water
- 2 cubes vegetable stock cubes
- 500 grams tomatoes
- 1 tbsp olive oil
- 4 cloves garlic
- salt
- pepper
- 3 tbsp basil leaves

Preheat the oven to 200 degree celsius. Line a baking tray with foil paper. Chop the tomatoes one by four and transfer to a large mixing bowl. Add oil, garlic, salt and pepper and mix well.

Transfer the tomato and garlic mix to the baking tray lined with foil paper and bake for 20 minutes at 200 degree celsius. Increase the temperature to 230 degree celsius and bake for 10 more minutes.

In a heavy bottom pan add water and vegetable stock cubes. Add the roasted tomatoes and garlic mixture to this. Add chopped basil and cook until it starts boiling.

Take this off the heat and let cool for about 20 minutes. Blend the mixture until smooth. Adjust the seasoning and serve hot
