If you are following me on Instagram, I am pretty certain that you must have come across my recent obsession with wraps. In any and every form ranging from quesadillas, enchiladas, or a good old fashioned dump-in-anything kind of wrap situation...
Yesterday I made these yummy gluten free beetroot falafels from the blog and tucked them in soft, warm tortillas and enjoyed them with this whipped feta dip. Before that I was eating frozen appetisers tucked in the wraps. And prior to that I made some simple grilled chicken and rolled it in soft flour tortillas that resulted in this recipe. I absolutely enjoyed this chicken wrap in its kathi-roll version.

These incredibly easy grilled chicken skewers could either be served as appetisers or bar snacks, or wrapped up in tortillas and enjoyed as whole meal by itself. Its so filling and so healthy! Looking for an even healthier way to enjoy this? Skip the flour tortilla wraps and add these lemon garlic grilled chicken cubes to a salad instead. This quick and delicious chicken recipe (call them kebabs or kababs or kabobs - depending on where you live!) is so full of flavor, even though it is made with just three ingredients. Plus it takes just about 10 minutes to cook on the hot grill - that makes it so perfect for a summer time grill recipe to add to your backyard barbecue menu!

Also this out-of-the-word healthy and yummy roasted beetroot hummus - you guys!! Dont skip this. I know its an added recipe all my itself, but its so flavorful and also adds that pretty pink color that makes your grilled chicken meal look amazing. How to make lemon garlic grilled chicken skewers?
- Simply add cubed chicken breast, oil, lemon juice, garlic, salt and pepper to a bowl. Thats it, this right here => that is your marinade.
- Cover and refrigerate for an hour. Now add them to skewers and get grilling.

- Keep brushing oil on the chicken skewers while they cook on the hot grill and continue adding the remaining lemon, garlic, oil marinade that will make the grilled chicken moist and juicy.
- Totally optional, but highly recommended: grill some veggies to go with it? How about some bell peppers tossed in oil and salt - over hot grill until nicely charred. You can add some onions too, if you like.

Once those lemony, garlicky chicken cubes are nicely browned and charred, you know they are cooked - so juicy, so delicious and so soft. Assemble them over some tortilla wrap (warm) that has a generous spread of beetroot hummus thats beautiful, healthy and smooth or regular hummus or how about a nice caramelised onion dip? Ingredients
For lemon garlic grilled chicken skewers:
- 500 grams chicken breast (cut in 2-inch cubes)
- 3 tbsp lemon juice
- 2 tsp garlic (grated)
- 5 tbsp oil
- salt
- pepper
For wraps:
- Tortilla Wraps
- Grilled Veggies (see note 1)
- Roasted Beetroot Hummus (see note 2 for more options)
Instructions
- Add chicken to a bowl and add grated garlic, lemon juice, 2 tbsp oil, salt and pepper. Mix well and cover with cling wrap (or use an air tight container) - transfer to refrigerator and let marinate for an hour.
- Once the chicken has marinated, heat the grill pan for about 2-3 minutes (electric griller or pan or an actual grill). While the grill is heating, insert skewers into the marinated chicken cubes (see note 3) 4-5 pieces per wooden skewer.
- Add the skewers to the hot grill and cook for about 2-3 minutes each side. Keep brushing oil and remaining marinade. Cook until the chicken turns brown/ charred or cooked upto your liking.
- Once cooked, transfer the hot grilled juicy chicken to a serving dish.
- If making wraps: spread roasted beetroot hummus over tortilla wraps, add grilled chicken and grilled veggies. Wrap and serve/ eat.
Notes
- Use whatever veggies you like. I used bell peppers - slice them in juliennes and toss in some oil and salt. Add to griller and cook until lightly charred.

- Make sure that wooden skewers are soaked in water (at least 30-40 mins) before using them for grilling.
