Happy Navratri everyone!! The festive season has officially begun in India and I can't wait for the chirpy lit up streets, local markets selling all sorts of Diyas and Lights and sweet shops selling all possible delicacies this entire month (favourite is of course sabudana vada). In no time it will be Diwali and we will already reach Christmas and then enter 2019! Does time-flying-so-quickly scare anyone of you as well :/
Lets talk about that later and shift our focus back on this amazing recipe for sabudana vada (tapioca fritters) - my most favourite navratri snack (heart eyes! :D) As much as I miss eating my garlicky appetisers: honey chilli potatoes or sesame toasts for example, I happily admit my love for navratri food especially all things sabudana. Give me all those sabudana vadas and khichdi and those colorful papads and I will be your biggest fan.
With special food like this sabudana vada, I love how fasting turns into feasting and you can treat yourself with amazing chole-puri-halwa on the ninth day.
How to make sabudana vada (tapioca fritters)?
This recipe for sabudana vada (tapioca fritters) is very easy to make and you need only five ingredients. Simply mix together soaked and drained Sabudana (tapioca pearls), boiled and grated potatoes, chilli, coriander and salt.
Shape the Sabudana vada (Tapioca fritters) into small balls - take mixture of quantity of 1 1/2 tbsp and roll them. Rubbing some oil on the palms makes the shaping easier. Shape them and refrigerate for an hour.
Once the sabudana vadas (tapioca fritters) are completely set, deep fry them and serve with chutney of your choice. We use a mixed method of frying these sabudana vada (tapioca fritters): We first deep fry them until they have attained a very light golden colour an looks just set. And then minutes before serving them, we simply air fry these sabudana vadas (tapioca fritters) and they are all puffed up and golden brown in colour.

Sabudana Vada (Tapioca Fritters)

Crispy sabudana vada/ tikki made with simple ingredients: potato & sabudana (tapioca) and deep fried until golden brown. A navratri speciality loved by all.
Ingredients
- 1 Cup Boiled and grated Potato (230 grams)
- 1 Cup soaked and drained Sabudana (Tapioca Pearls) (measured for soaked and drained (puffed up tapioca pearls))
- Salt
- 1/2 Tsp Chilli Powder
- 1/3 Cup Coriander (chopped)
- 1 Tbsp Oil (for shaping fritters)
- Oil (for deep frying the fritters)
Instructions
- Boil the potatoes and grate them. Keep aside.
- In a large dish mix together the boiled potatoes, sabudana (tapioca pearls), salt, chilli powder and coriander.
- Rub some oil on the palms and shape the tikkis/ fritters to a small 1 1/2 tbsp measurement ball and flatten them to make fritters.
- Refrigerate for 1 hour until they are completely set.
- Deep fry the fritters twice and serve with chutney of choice.
