Simple and delicious restaurant style kadai paneer recipe that is made with the most basic spices (pretty sure you have them in your pantry/ kitchen essentials). I love this spicy curry that is more like a dry "sabzi" to serve with roti or naan or just regular cumin rice.
What is kadai paneer?
Literally translated, kadai means wok or a large pot is okay too... and paneer is Indian cottage cheese. Kadai paneer is a spicy (well not too much, plus its easily customisable!) curry (not runny & more like a sabzi) or like a tangy tomato paste mixed together with capsicum (bell peppers) and onions that are cubed. It is quite popular in India and also served at almost all Indian restaurants across the globe.

How to make kadai paneer at home?
- start with a bit of oil + ginger + garlic
- add in your cubed onions and capsicum (green pepper) let them cook for a few seconds
- add tomato puree (blend/ blitz fresh tomatoes) + the spices (turmeric, salt, chilli) let cook for a while
- add garam masala, coriander powder, sugar and cream
- finally add the paneer - toss it all together and serve

Ingredients
- 2 tbsp oil
- 1 tsp ginger (grated)
- 1 tsp garlic (grated)
- 1 large capsicum (cubed)
- 1 large onion (cubed)
- 1 cup tomato puree: 200 grams (see note 1)
- salt
- 1/2 tsp degi mirch
- 1/2 tsp chilli powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp sugar
- 2 tbsp cream or yogurt
- 200 grams paneer (cubed)
Instructions
- Add oil to a kadhai (or wok) and let heat for a few seconds. Add ginger and garlic and mix well on medium flame for a few seconds.
- Add onions and capsicum and mix until lightly cooked.
- Add tomato puree, salt, degi mirch, chilli powder, turmeric and mix until well combined.
- Cover and let cook on medium flame for 2-3 minutes.
- Take the lid off and add garam masala, coriander powder and sugar. Mix well for a few seconds.
- Add cream or yogurt and finally add the paneer.
- Mix and serve with naan or rice.
Notes
- To make tomato puree, simply blitz fresh tomatoes in a blender and use 1 cup (200 grams) for this recipe.
