Healthy, delicious and easy oven roasted sweet potato, corn and quinoa salad with a really simple yogurt dressing. Perfect for a salad night, this recipe is super simple to follow.

Roasted Sweet Potato
- 2 medium sized sweet potatoes (orange or white) (cubed)
- 1 tbsp olive oil
- salt
- pepper
Yogurt Dressing
- 1/4 cup yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp honey
- 1/2 tsp garlic
- salt
- pepper
Additions
- 1 cup cooked quinoa
- 3/4 cup boiled corn
Instructions
- Preheat the oven to 200 degree celsius. In a bowl, mix together cubed sweet potato, olive oil, salt and pepper. Mix well and lay on a baking sheet. Transfer to the oven and let cook for 30-35 minutes.
- In a small bowl, mix together all ingredients listed under "yogurt dressing"
- Prepare the salad bowls. Add quinoa, corn, roasted sweet potato cubes. Pour over the salad dressing and serve.
