Earlier this month we posted this crunchy asian pearl barley salad which has already become a super hit recipe on our blog! Have you tried it yet? We couldn’t stop ourselves from trying another salad with crunchy pearl barley and experimented a little bit with some easy ingredients.
This healthy, delicious and easy to make summer salad requires just a few simple ingredients:
- flax seeds
- sunflower seeds
- pumpkin seeds
We cooked the pearl barley in vegetable stock and that added the extra flavour to the salad! If you don’t want to use vegetable stock, you can boil the pearl barley in water as well. Make sure you let the pearl barley cool down for about an hour (plus extra 30/ 40 minutes in the refrigerator) for a cold salad.
The dressing for this salad is very easy to make and requires only apple cider vinegar, honey, lemon and salt and pepper.

Super easy and healthy summer pearl barley salad tossed with corn, pomegranate, flax seeds, sunflower seeds and pumpkin seeds.
- 1 1/2 cup cooked pearl barley (cooled)
- 1/2 cup corn (boiled)
- 1/2 cup pomegranate
- 1/2 tbsp flax seeds
- 1/2 tbsp pumpkin seeds
- 1/2 tbsp sunflower seeds
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp honey
- salt & pepper to taste
- In a large mixing bowl, add cooked pearl barley, corn, pomegranate, flax seeds, sunflower seeds, pumpkin seeds and give it a good mix. Keep aside.
- In a small bowl, mix together apple cider vinegar, lemon juice, honey and salt and pepper and mix.
- Pour the dressing over the salad and toss the salad until everything is well combined.
