Crunchy Thai Pearl Barley Salad


Super crunchy thai pearl barley salad with best asian flavours!


  • 1 1/2 Cup Cooked Pearl Barley
  • 1/4 Cup Peanuts
  • 1/2 Cup Purple Cabbage (finely chopped)
  • 1/2 Cup Carrots (finely chopped)
  • 4 tbsp Lime & Sesame Dressing (read notes for alternative)
  • 4 tbsp Scallions (finely chopped)


  1. Cook Pearl Barley as per package instructions and keep aside to cool down to room temperature. Transfer it to a large bowl and put in the refrigerator for about 20 mins.
  2. Fluff up the pearl barley using a fork. Add the purple cabbage, carrots and peanuts.
  3. Add the salad dressing and toss it until everything is just mixed.
  4. Top with scallions and serve.

You can alternatively also make the dressing yourself, by mixing together lime juice (about 2 tablespoons), honey (1 tbsp), sesame oil (1 tbsp), soy sauce (1 tbsp) and also adding some toasted sesame seeds to it for extra crunch.
